recipe contest...

I entered a recipe contest. It was a Smuckers "Simple Chef" recipe contest - no more than 7 ingredients. Grand prize is 1800.00 worth of cookware. Four first prizes are a 400.00 mixer. I'll know if I won by mid-March. I'm not really looking to win. I'm sure there are tons of entries. But, it was fun to enter. I made it and we all tried it to see if it would "pass" for the entry. That's the funnest part! Here's what I sent:

Peanut Butter Pie

2 (3 oz) pkgs. cream cheese, softened
2/3 cup powdered sugar, sifted
1/2 cup Smucker's Natural creamy peanut butter
2 Tbsp. milk
2 cups cool whip
1 graham cracker crust
2 Tbsp. mini semi-sweet chocolate morsels

Step 1: Beat together cream cheese and sugar until fluffy
Step 2: Add peanut butter and milk. Beat until smooth and creamy
Step 3: Fold in cool whip until mixed well
Step 4: Pour into pie shell. Sprinkle chocolate morsels on top
Chill 6 hours. Makes 8 servings

It has really been fun. It has inspired me to maybe enter some more recipe contests :)

Ev lost two front teeth...

I don't know what happened to my third post, but Evelyn lost her two front teeth last week. I had to pull one! Josh wasn't home from work yet. It was a first for me - except my own teeth when I was little. I faked being brave and non-chalant about it, but it was gross!

She is so adorable without those teeth. It's hard not to laugh every time she talks because it is so CUTE!

We are still very much enjoying eating at the table each evening. The meals are better and more complete. We enjoy each other more. The T.V. hasn't been on all week and NOBODY has missed it - not even Karleen. We play games together - connect four, shutes and ladders, pass the pigs, card games: Go Fish, Old Maid, Uno, Crazy Eights, etc..

Eating around the table

We've started eating around the table. I know, shouldn't we always be doing this?? Unfortunately we had developed the habit of eating our supper in front of Andy Griffith or Little House. It has been really nice, and not as complicated as I thought it might be, with having to set the table, clean-up, etc.. That is because Karleen and Evelyn are such big helpers! They take turns each night - one will be in charge of setting the table (and they are very creative let me tell you! - Evelyn has been wrapping the silverware with gold ribbon! And they light a tall skinny candle in my one and only crystal candle holder(the pair to it got broken in the girls' room) Fancy Smancy!) and the other does the dishes when we are done. While daddy & daughter or mommy & daughter are in the kitchen, the others play a game, maybe cards(old maid, go fish, uno, etc.) at the table. We set Emily in her bouncy seat to watch.

Where to begin??

I should have started this long ago! The whole idea that I am thinking about this blog is to sort of journal and keep up with the happenings around the Ellerbee home. Our family consists of me(April), Josh, Karleen(9), Evelyn(6), Emily(6 m0s), Daisy(the dog), Callie & Spike(the cats). Karleen and Evelyn will be able to make posts on this blog also (should be interesting!).
